Gluten-Free Sugar-Free Banana Pumpkin Bread

Here's the recipe for the Valentine's Day treat I made the girls. I'll post pictures of them later devouring it!

2 ripe bananas
2 eggs
1/3 cup olive oil or melted butter
1 1/3 cup pumpkin puree
3/4 cup honey
2 1/2 cups all-purpose gluten-free flour mix (Arrowhead Mills or Bob's Red Mill works great)
1 tsp baking soda
1 tsp baking powder
2 tsp xanthan gum
1/2 tsp sea salt
1 T pumpkin pie spice
2 tsp cinnamon

Preheat oven to 350. Combine wet ingredients in a large bowl. Combine dry ingredients in a separate bowl then stir them into the wet ingredients until just combined.

Makes 1 large loaf, 2 small loaves, or 4 mini loaves.

Bake 30-45 minutes (depending on size of the loaf) or until a toothpick comes out dry.

  1. do you just buu xanthm gum at wholefoods? i heard it's a miracle ingredient....
