Homemade Salsa

This is my version of homemade salsa. I like it because you don't have to can it or anything and it's not very spicy at all. It makes about 2 cups of salsa which doesn't last long with Scott around, so I usually triple it...at least.

6 tomatoes (peeled and seeded)
2 cloves garlic, finely chopped
1-2 Tbsp. onion, finely chopped
2 Tbsp. cilantro, finely chopped (must be fresh, dried tastes awful in this)
splash of lime juice
1 jalapeno, seeded and finely chopped

Put all ingredients in a blender or food processor and turn on until you've reached desired chunkiness.

To peel the tomatoes, cut out the core and slit an "X" in the bottom. Place in boiling water for 10-15 seconds (no longer or they will begin to cook!). Remove and allow to cool. The skin will easily peel off. Cut along the equator and squeeze over a bowl to remove the seeds.

  1. This sounds great. I like how easy and simple it is :) Sounds super yummy. We love salsa. We also like heating up cheddar cheese and adding salsa to it until it is all melty mm mmmmm ! Thanks for posting this I am now Following your blog.
